RMD Group Announces New Concept – Huntress

RMD Group (Rustic Root, Side Bar, Volcano Rabbit, Ciro’s, etc) announced their new concept Huntress, a sophisticated steakhouse and whisky society, is set to open its doors inside the Grand Pacific Hotel building in Spring 2019. RMD Group announced its takeover of the historic space in early 2018, revealing plans for a multi-level, multi-concept restaurant and bar space.

Huntress will be one of San Diego’s most distinct steakhouse experiences, offering the finest cuts of meat, fresh seafood and other signature dishes in a captivating, contemporary atmosphere. The venue will age its meats in-house through a unique dry-aging program and will also be home to Southern California’s largest selection of Japanese whisky with more than 60 rare bottles. The kitchen will be helmed by Executive Chef James Montejano, a San Diego native who has plated at several award winning restaurants including the Michelin-starred Michael Mina in San Francisco.

To complement the distinct flavors of its innovative menu, Huntress’ expansive beverage program will include an array of fine wines, spirits and signature craft cocktails. Huntress will feature unique tasting menus with wine pairings and whisky flights and will host various wine and whisky-themed events and experiences. Huntress will also house one of the largest collections of Japanese whisky in Southern California with a masterfully curated collection including rare selections not found outside of Japan and other unique bottles that will excite whisky enthusiasts.

Designed by award-winning interior design team Davis Ink., Huntress will offer guests a sophisticated yet approachable environment complementary of the dining experience. On the main dining room level, thoughtful design statements will include a wall composed of framed butcher knives and a custom-designed chandelier composed of 95 strategically placed glass pendants. The interiors are warm and inviting, boasting soft marble, intricate tile patterns and polished brass. Draped in green veined, book-matched marble, the elegant center bar is the focal point of the dining room and offers guests the perfect place to sip and socialize. A collection of custom art features will also complement the booth-style seating areas.

The second level, the Huntress mezzanine, will serve as an extension of the first floor with a more intimate, relaxed feel. The mezzanine bar will artfully showcase Huntress’ collection of rare Japanese whiskies and the space will boast a catwalk overlooking the entire main dining room, including a floor-to-ceiling wine display and a private wine tasting and dining table that cantilevers over the restaurant entry.
